Cleaning, disinfection and sanitisation

Today we will talk about these three concepts that are widely used in various health and agri-food fields, mainly because their final product and/or service depends on the quality of these actions, but also in others, since these tasks must be carried out in any activity, even in the domestic sphere.

Cleaning is the set of operations that make it possible to remove visible or microscopic dirt. These operations are carried out using detergent products chosen according to the type of dirt and the surfaces where it settles. Cleaning agents generally include components that wet and penetrate the dirt, which facilitates its mobilisation.

Disinfection, on the other hand, is the set of operations aimed at the temporary reduction of the number of living micro-organisms and the destruction of pathogenic and spoilage micro-organisms.

However, both concepts, cleaning and disinfection, are synonymous with the concept of sanitisation. By sanitisation, we mean a treatment that reduces the microbial population to levels that are considered not harmful to public health. It differs from disinfection in that sanitisation implies a cleaning action, which is not essential in disinfection.

The concepts of cleaning and disinfection are hardly separable from each other. The removal of dirt as a cleaning objective means at the same time the destruction of the main germ fraction present. On the other hand, disinfectant solutions cause to a small extent the transfer of soiling, in which living micro-organisms can be found. The main task of disinfection, the destruction of germs, is not exclusive to disinfectants either. Cleaning operations, especially those carried out at high pH and temperatures, have bactericidal activity.
Thus, the cleaning and disinfection plans or programmes carried out in clinics, catering kitchens or in the prevention of legionellosis could also be called sanitisation plans or programmes, as this term includes both actions together.

These programmes or plans must include air and surface microbiological controls to check that the programme is well designed and works.
